The star of this champagne drink is an alcohol-infused ice pop. Made with fresh fruit, the pop is submerged in crisp Prosecco. (Pop flavors include everything from blackberry mint to peach ginger infused with rum.) This summer delight is definitely the signature drink at Loopy Doopy Rooftop Bar, which is located at the Conrad Hotel downtown.
Flûte Bar is one of the city's most well-known champagne bars, and with good reason. The loungy, sexy feel makes it an ideal spot for cocktail hour. But it's their champagne mojito that really steals the show during the summer months. A mix of Bacardi, ginger beer and Piper Heidsieck brut champagne (with a minty, citrus twist), this drink refreshes like no other.
If you're looking to get fancy, The Skylark is where it's at. This rooftop bar on West 39th Street serves up one bubbly cocktail that particularly hits the spot at the end of a hot day in the city. The Coco is a unique combo of gin, peach, violet liqueur and Prosecco. The concoction is then garnished with strawberry pearls, with floral notes of St. Germain and green chartreuse singing with every sip.
